Bryan and I love Mexican food. Burritos, quesadillas, enchiladas…OH MY! And, like most Mexican dishes, you can’t eat them without (at least) a side guacamole. It seems shameful.
Or even illegal? Well, it should be…
Chips are really just sooooo unnecessary. I could eat this guacamole with a spoon. Or my finger. Just a few simple (and tasty) ingredients and you have yourself a bowl-ful of yumminess.
Dip those chips right in…or just hand out a few spoons. 🙂
Mandy’s Favorite (Simple) Guacamole
vegan, makes ~2 1/2 cups
The Simple Ingredients:
2 medium avocados, the riper the better
2 tbsp fresh lime juice
1/4 cup fresh cilantro, finely chopped
1/2 small tomato, diced
1/4 cup red onion, diced
1/2 tsp cumin
salt and pepper, to taste
1-2 drops hot sauce (optional)
- Gather your ingredients. Prep your avocados by cubing. Toss avocados with lime juice.
- Mash to your liking – some people prefer their’s mashed, some like it chunky. 🙂 It’s up to you!
- Then fold in the diced onion, chopped cilantro, tomato, optional hot sauce and spices. Toss well.
Mashed or Chunky? How do you like your guacamole? I like mine right in the middle – not too mashed, not too chunky. Does this make me picky? Feel free to serve this guacamole chunky or mashed. Just take a fork to the avocados and mash them down if that’s how you like it.
This guacamole recipe is great because it takes less than ten minutes to prepare. If you need to make it ahead of time, swap out the lime juice for lemon (or just add a little lemon juice) – this will prevent it from turning brown.
