Grilled cheese sandwiches are a de-lish, toasted delight popular all over the world. So popular in fact, that they have their own holiday. And guess what? It happens to be today. Yep, that’s right, it’s National Grilled Cheese Sandwich Day.
Gooey, creamy and cheesy, the grilled cheese sandwich pushes some serious comfort food buttons.
Naturally the best way to celebrate Grilled Cheese Sandwich Day is by making one. It’s practically your duty (teehee, I laugh when I hear or say this word…do you?) to indulge in at least one…or two.
All you need to make a classic grilled cheese sandwich is bread, cheese and butter. But you know me, and I don’t do classy, or classic. I like to experiment by adding various ingredients to my grilled cheese sandwiches.
I threw some things together today and this is what I came up with. I hope you enjoy it as much as I did!
The Not-So-Classic-Grilled Cheese Sandwich
Yield: 1 sandwich
- 2 slices of whole wheat bread (sourdough would be good too)
- A few slices of cheese of choice – I used havarti (my absolute favorite)
- 1/2 of an avocado, sliced
- 1/2 T butter
- A few slices of tomato
- A few slices of red onion
- 1 T tzatziki sauce
- Handful of spinach
- 1/2 tsp dried basil
- S & P to taste
Smear inside of bread slices with tzatziki sauce. Fill bread slices with cheese, tomato, onion, and spinach. Sprinkle with dried basil, S & P. Spread outside of sandwich with butter.
Spray small skilled with coconut oil. Cook in skillet on low-medium heat for 3 minutes on each side, or until bread is golden brown and cheese is melted.
Now, open up sandwich and add avocado slices – I do this after it’s fully cooked because I don’t like my avocado cooked, but it’s up to you!

And because a half of an avocado just wasn’t enough for me, I served my sandwich alongside rice with chunks of avocado. Seriously people, I think I’m addicted to avocados…
