Nothing compares to home cooked pasta sauce. Sure, the store-bought kind usually suffices (and is what I almost always go with), but this week I was feeling inspired to make my own. The best part about this pasta sauce is you don’t have to cook it!
And as it turns out, there’s nothing quite like a no-cook pasta sauce for nights when you need to whip something up without a lot of fuss – like nights when I get home from work at 8:00pm and I’m haaaangry.
Angel Hair Pasta in Vegan No-Cook Spinach Sauce
Yield: serves 1
- 8 oz angel hair pasta
- 1 small Roma tomato, diced (cherry would work too)
- ~5 ounces baby spinach
- 2 cloves garlic, minced
- 3 T olive oil
- 3 T water
- 1/2 tablespoon lemon juice
- salt and pepper, to taste
Bring a medium pot of lightly salted water to a boil. Add pasta and cook according to package directions. Drain and set aside.
Meanwhile, make the sauce by combining spinach, garlic, oil, water, lemon juice, salt, and pepper in a food processor. Process until smooth.
In a medium serving bowl, toss pasta with tomatoes and sauce. Adjust seasoning to taste and serve. Any leftovers can be served warm or cold the next day for a delicious lunch – I didn’t have any leftovers, but next time I plan on making a bigger batch. 🙂
This meal is so refreshing and not nearly as heavy as your typical pasta.
And did I mention it’s sooooo good.
