What has everyone been up to? I’ve been doing a lot of pet sitting – this time of year tends to get busy for that! I also wrapped up my last week doing sea turtle surveys for the season. It was a bittersweet ending for me because the last month of surveys consisted of zero new nests and zero hatchlings – they were all washed out by Irma. Fortunately, the beaches are finally starting to look normal again, and we had a very successful season, regardless of how it ended.
I also had some pretty epic sunrises during my last few weeks…

Speaking of not too shabby…
Last week I decided to have some fun with avocados. You may not know this about me, but I love me some avocados. I could eat them all day, every day – on top of a big salad, a vegetarian sandwich, guacamole (duh), or plain with some salt and pepper. Avocados make me happy. And with all the negativity going on in the world, I needed some happy.
Avocados are rich in monounsaturated fats. Incredibly heart–healthy and delicious. I probably eat 3-4 avocados a week. Have I mentioned that I love them? Avocados are rich in Vitamin K, E, folate and fiber.
I had a bunch of cherry tomatoes and feta cheese so I assumed they would go well stuffed in an avocado. Let’s be real, you can stuff an avocado with all sorts of fillings, but who doesn’t love cherry tomatoes and cheese?
These Tomato Salad-Stuffed Avocados are deeeee-lish!
Tomato Salad-Stuffed Avocados
Yield: Serves 1-2
- large handful cherry tomatoes, chopped in half
- 1/3 cup crumbled feta cheese
- 1 T minced fresh parsley
- 1 T olive oil
- 1/2 tablespoon red wine vinegar
- 1/4 teaspoon dried oregano
- salt and pepper to taste
- 1 medium ripe avocado, halved, pitted and peeled
- In a small bowl, combine the first 7 ingredients. Spoon into avocado halves. Serve immediately. Add more salt and pepper if needed. Enjoy!
