One of my favorite ways to ensure that I’m getting enough greens is by eating a BIG salad at least once a day (usually for dinner). Recently I went through a I don’t want to eat salad phase (I blame pregnancy), so I was making a lot of green smoothies instead, but my anti-salad days are over and today, I’m excited to share my current favorite salad recipe with y’all.

I can’t believe it’s been over a week since I had to say goodbye to my Lily girl, and if I’m being honest (which I always am!), it’s been one of the most challenging weeks of my life. Yes, it is getting easier, but I don’t think the heartache will ever fully go away. I still cry every day, sometimes multiples times a day – usually in the morning, at 4:30 in the afternoon, and at night when I’m laying in bed. The morning and 4:30 because these were the times Lily used to remind me it was time to eat, and the evening I guess because my mind and body slow down, forcing me to focus on my thoughts.

There is something magical about hitting 6-7 weeks postpartum. Many of my momma friends told me that I’d start to “hit my groove” at this point, and so far, this has been the case. Bryan and I are feeling so much more confident about parenthood – not that there haven’t been moments of difficulty (SO many moments), but I feel like we finally have our feet planted beneath us. A huge shift from the first few weeks when we brought Lucy home. It feels really good.

Baby Clark is set to arrive any day now and Bryan and I are trying to stay patient, but it’s proving to be a challenge. We’ve been pretty prepared for her arrival for quite some time now – the hospital bag is packed, the house is cleaned, the nursery is done, and we have some meals in the freezer for when we get home from the hospital. But one thing I hadn’t done was make some grab n’ go snacks for us to have around the house – something I was told is very important, especially when you’re breast feeding.
Apparently breastfeeding moms get very hungry during all hours of the day…
I recently made a Costco run and grabbed some fruit bars and Clif Bars to have around the house for us, but guess what? As we’ve been impatiently waiting, we’ve consumed most of them! So yesterday I took some time to restock our stash and I made Soft & Chewy Homemade Granola Bars.

I know Spring has sprung, but there is NO such thing as a season (or reason) for pumpkin in my book.
Who’s with me on this one?
Pumpkin should be enjoyed year-round – pumpkin pie, pumpkin spice lattes and pumpkin SMOOTHIES of course!
Smoothies like this one…

It’s been a tough week on the home-front…I haven’t been feeling my best – mostly just anxious, overwhelmed and achy. My legs and feet are so swollen that I can barely fit into my shoes (thankfully we live in Florida, where shoes are not always a requirement).
On top of that, Buddy had surgery Tuesday and I was a mess! Nothing big, he just had his teeth cleaned and a few moles/masses removed, but the last time he was under anesthesia it didn’t go very well, so I was one worried momma. I contemplated all day whether or not I had made the right decision by putting him under again, but his mouth has been very painful for awhile now, and the guilt I felt as I watched him suffer everyday outweighed my fears of another anesthesia. Needless to say, I was a nervous wreck all morning…

CAUTION: The photographs for this post are terrible. I mean absolutely terrible. Please forgive me, I was famished when I made this recipe. On top of that, I’ve been super tired lately – soooo tired that the thought of dumping a smoothie into a pretty, glass mason jar seemed almost impossible. Forgive me? This baby is sucking the life out of me…
I know, I know, it’s only going to get worse…
