Fall has arrived. Yes, even in south Florida.
Don’t believe me? Well, believe it because this week it dropped down into the 50’s overnight! For you northerners, that probably doesn’t seem very fallish, but for us here in south Florida, it’s about as fall as fall gets.

It’s been another busy weekend for me – Bryan and I went to the Pittsburgh Penguins hockey game Friday night down in Ft. Lauderdale, and I’ve also been dog sitting again. Meaning, I haven’t slept much and I miss my pups! I love dog sitting but the overnight stays can be a bit brutal for me – I don’t always sleep well at other people’s houses, and the dogs I’m watching are usually missing their mom and dad so they don’t always sleep well either. Making for a very grumpy (and sleep deprived) Mandy.

I’m sure a lot of you are going to see the word eggplant and immediately stop reading this post…but wait! Before you go, hear me out. Eggplant isn’t my favorite vegetable either, it’s spongy and bland. But when you prepare it the proper way – like with loads of cheese, bread crumbs and marinara sauce – it can be rather tasty!
Poor little eggplant, just needs a little T.L.C…

As promised, I have a delicious new recipe to share with y’all today.
I don’t know about you, but when I see turnips at the store, I usually turnip my nose to them (see what I did there?). Turnips are one of those vegetables that looks sort of strange sitting there in their raw, awkward state. Not to mention, they can be intimidating. Don’t you agree?
I’ve only ever cooked them once before and the resulting bitter veggie was enough for me to never want to cook them again.

I’m a huge fan of corn (and no, I don’t mean the band Korn). I think it stems from early childhood when my grandpa would bring over fresh corn straight from his garden and it tasted like nothing else on the planet. Oh man my grandpa could grow and cook a mean corn on the cob.
“The trick is to only boil it for 2 minutes tops,” he would always say. “People cook it too long and it gets mushy.”
This trick passed on down the line to my mother and now me…

Let me start with my good news!
No, I’m NOT pregnant…and no, I’m NOT getting married…
The good news is, with the help of Bryan and the girls at work, I have successfully completed my Mayngo Mission. That’s right y’all, Mayngo Madness has finally subsided. Our tree has stopped producing fruit and we have managed to eat almost every mango from it – aside from the few that the squirrels got to first.
