I’m sure a lot of you are going to see the word eggplant and immediately stop reading this post…but wait! Before you go, hear me out. Eggplant isn’t my favorite vegetable either, it’s spongy and bland. But when you prepare it the proper way – like with loads of cheese, bread crumbs and marinara sauce – it can be rather tasty!

As promised, I have a delicious new recipe to share with y’all today.
I don’t know about you, but when I see turnips at the store, I usually turnip my nose to them (see what I did there?). Turnips are one of those vegetables that looks sort of strange sitting there in their raw, awkward state. Not to mention, they can be intimidating. Don’t you agree?
I’ve only ever cooked them once before and the resulting bitter veggie was enough for me to never want to cook them again.

I’m a huge fan of corn (and no, I don’t mean the band Korn). I think it stems from early childhood when my grandpa would bring over fresh corn straight from his garden and it tasted like nothing else on the planet. Oh man my grandpa could grow and cook a mean corn on the cob.
“The trick is to only boil it for 2 minutes tops,” he would always say. “People cook it too long and it gets mushy.”
This trick passed on down the line to my mother and now me…

Let me start with my good news!
No, I’m NOT pregnant…and no, I’m NOT getting married…
The good news is, with the help of Bryan and the girls at work, I have successfully completed my Mayngo Mission. That’s right y’all, Mayngo Madness has finally subsided. Our tree has stopped producing fruit and we have managed to eat almost every mango from it – aside from the few that the squirrels got to first.

Before you tell me how much you hate eggplant and immediately cast off this recipe, hear me out:
I’m not a huge eggplant fan either. I featured it on my blog last summer when I posted 4 Vegetables for People Who Hate Vegetables, but I love vegetables! So honestly, I think eggplant is pretty bland, and don’t get me started on the texture… sometimes I feel like I’m eating my kitchen sponge. It’s safe to say that I’d put eggplant on my least favorite vegetable list, right next to celery.

Something I hold very near and dear to my heart (and found out Bryan despises…) is arugula. There is just something about this dark, leafy green that I can’t seem to get enough of.
Arugula is often added to spring mixes, where it adds a delicious zest. While the young, paler leaves have a mild flavor – good for fresh dishes like salad and pesto – the older, darker leaves have a bit of pepper to them, making them an excellent addition to soups and pizza.
