It’s been a tough week on the home-front…I haven’t been feeling my best – mostly just anxious, overwhelmed and achy. My legs and feet are so swollen that I can barely fit into my shoes (thankfully we live in Florida, where shoes are not always a requirement).
On top of that, Buddy had surgery Tuesday and I was a mess! Nothing big, he just had his teeth cleaned and a few moles/masses removed, but the last time he was under anesthesia it didn’t go very well, so I was one worried momma. I contemplated all day whether or not I had made the right decision by putting him under again, but his mouth has been very painful for awhile now, and the guilt I felt as I watched him suffer everyday outweighed my fears of another anesthesia. Needless to say, I was a nervous wreck all morning…

Looking for a new, healthier way to make lasagna? Well you’ve come to the right place! This Butternut Squash and Spinach Lasagna recipe is sure to knock your socks off!
And because it’s made with butternut squash, it’s a great choice for a vegetarian main dish. Plus, it’s healthier! The butternut squash is stuffed with spinach and combines three of my favorite cheeses: Ricotta, Parmesan, and Mozzarella, to create the ultimate comfort food.

Do y’all ever have a craving for a big, juicy burger?
I do. ALL OF THE TIME.
Only my burger cravings are of the meatless kind. 🙂 This might be boring for some, but nothing beats a good Veggie Burger IMO. In fact, some of the best burgers I can remember eating have been meatless.
Don’t believe me? Well, I’m here to change your mind.

CAUTION: The photographs for this post are terrible. I mean absolutely terrible. Please forgive me, I was famished when I made this recipe. On top of that, I’ve been super tired lately – soooo tired that the thought of dumping a smoothie into a pretty, glass mason jar seemed almost impossible. Forgive me? This baby is sucking the life out of me…
I know, I know, it’s only going to get worse…

You’re not going to believe me, but the weather in south Florida has been very chilly these past few weeks. No joke. It’s been getting into the 40’s at night and only into the 60’s during the day. Yes, I realize for most of you northerners, that’s not very cold, but for those of us used to 80 degrees, it’s cold.
I’ve enjoyed the cooler weather. It makes if feel more like the holiday season to me. Plus, I get to wear sweatshirts and sweatpants, and drink tea and hot chocolate during all hours of the day (not that this is anything new). 🙂

Happy weekend y’all! We are supposed to have some cooler weather this weekend in south Florida and I have to be honest…
I CAN’T WAIT! I actually miss sweaters and boots, and hot chocolate and warm bowls of soup. Which brings me to today’s post…
I love soup. I also love lasagna. So this week, I decided to make lasagna soup!
Two birds. One stone.
I already have a bunch of favorite soups including split pea, broccoli cheddar and miso. But this Vegetarian Lasagna soup might be my new favorite (I feel like I say this a lot…).
I’ve been feeling a little blah lately, and this soup definitely serves up some much needed comfort-food vibes. Oh, and did I mention you avoid all the hassle of making traditional baked lasagna.

Hi y’all! Bryan and I are back from our Thanksgiving trip to Pennsylvania (we had a great time!). Since we got home, I’ve been busy organizing, cleaning, working and cooking of course! I have some really fun (and delicious) recipes to share with y’all in the upcoming weeks…
Are you ready?
Pennsylvania was a brisk 27 degrees the first few days we were there so Bryan’s mom prepared bean soup for us – we joked that we rarely eat soup because it’s always so damn hot in south Florida, but when we came home, I craved a warm bowl of protein-packed soup.
