Happy weekend y’all! We are supposed to have some cooler weather this weekend in south Florida and I have to be honest…
I CAN’T WAIT! I actually miss sweaters and boots, and hot chocolate and warm bowls of soup. Which brings me to today’s post…
I love soup. I also love lasagna. So this week, I decided to make lasagna soup!
Two birds. One stone.
I already have a bunch of favorite soups including split pea, broccoli cheddar and miso. But this Vegetarian Lasagna soup might be my new favorite (I feel like I say this a lot…).
I’ve been feeling a little blah lately, and this soup definitely serves up some much needed comfort-food vibes. Oh, and did I mention you avoid all the hassle of making traditional baked lasagna.

Hi y’all! Bryan and I are back from our Thanksgiving trip to Pennsylvania (we had a great time!). Since we got home, I’ve been busy organizing, cleaning, working and cooking of course! I have some really fun (and delicious) recipes to share with y’all in the upcoming weeks…
Are you ready?
Pennsylvania was a brisk 27 degrees the first few days we were there so Bryan’s mom prepared bean soup for us – we joked that we rarely eat soup because it’s always so damn hot in south Florida, but when we came home, I craved a warm bowl of protein-packed soup.

I don’t know how I’ve managed to let almost two weeks slip by without checking in with y’all. Ugh.
Can I be honest?
I haven’t really felt like writing lately. Not sure why – blame the pregnancy exhaustion or just a sense of blahs. Who knows, but I’m trying not to let myself feel guilty about it. We all are allowed our blah days (or weeks in my case), and if I don’t feel like writing, I shouldn’t have to…

Did I scare you? 🙂 Teehee. Happy Halloween y’all! What does everyone have in store for this spooky holiday? And more importantly, what is everyone dressing up as??? I love seeing how creative people can get on Halloween, so please share!
I have to work all day. WOMP. WOMP. But it should be fun. I’m hoping clients come in dressed up. I plan on going as a deviled egg – pictures to come.

Fall has arrived. Yes, even in south Florida.
Don’t believe me? Well, believe it because this week it dropped down into the 50’s overnight! For you northerners, that probably doesn’t seem very fallish, but for us here in south Florida, it’s about as fall as fall gets.
And I LOVE IT.

It’s been another busy weekend for me – Bryan and I went to the Pittsburgh Penguins hockey game Friday night down in Ft. Lauderdale, and I’ve also been dog sitting again. Meaning, I haven’t slept much and I miss my pups! I love dog sitting but the overnight stays can be a bit brutal for me – I don’t always sleep well at other people’s houses, and the dogs I’m watching are usually missing their mom and dad so they don’t always sleep well either. Making for a very grumpy (and sleep deprived) Mandy.

One of my favorite things to do is to find delicious recipes and tweak them. I tweak them because: 1- I don’t have all of the ingredients on hand or 2- I don’t like all of the ingredients in the original recipe.
I found today’s recipe on Lexi’s Clean Kitchen and knew I had to try it, unfortunately I didn’t have all of the ingredients so…
