I still don’t understand where the time goes. I can’t believe it’s been almost 10 days since my last post and almost 8 weeks since my last Pregnancy Post!
Speaking of time, I’ve been busy getting stuff ready for the arrival of our sweet baby girl – hard to believe she will be here in less than 6 weeks (unless she decides to arrive late of course). Who knew having a baby took such preparation?! I mean, I know when they arrive it’s a lot of work, but man, there has already been so much preparation and she’s still in my belly!

Looking for a new, healthier way to make lasagna? Well you’ve come to the right place! This Butternut Squash and Spinach Lasagna recipe is sure to knock your socks off!
And because it’s made with butternut squash, it’s a great choice for a vegetarian main dish. Plus, it’s healthier! The butternut squash is stuffed with spinach and combines three of my favorite cheeses: Ricotta, Parmesan, and Mozzarella, to create the ultimate comfort food.

You’re not going to believe me, but the weather in south Florida has been very chilly these past few weeks. No joke. It’s been getting into the 40’s at night and only into the 60’s during the day. Yes, I realize for most of you northerners, that’s not very cold, but for those of us used to 80 degrees, it’s cold.
I’ve enjoyed the cooler weather. It makes if feel more like the holiday season to me. Plus, I get to wear sweatshirts and sweatpants, and drink tea and hot chocolate during all hours of the day (not that this is anything new). 🙂

Yesterday I made Homemade Pumpkin and Oatmeal Dog Treats for the pups…
Don’t they look excited? They loved them!
The recipe I used made a huge batch of treats and I didn’t want to make that many because I have little pups, so I only made half, leaving me with a lot of leftover pumpkin.

After bidding farewell to Drake Bay, we took a boat, then a bus to Uvita. It was hot and I was miserable. But I was still on cloud 9 thinking about how excited I was to be engaged to such an incredible man.
The hotel we planned on staying at was closed, but we ended up finding a very eco-friendly and quant hippie hostel which was inundated with young, hippie (American) travelers. I fit right in. 🙂

Hola! We are back from Costa Rica and I hope y’all haven’t forgotten about me because I haven’t forgotten about you! In fact, I thought about you a lot during my time in Central America – when I was eating incredible food and when I was hiking through the cloud forest, I thought about how much I couldn’t wait to share my experiences with y’all! So, on that note, it’s good to be back. 🙂 I can’t wait to share some of our pictures – which I promise to soon!
But first, I want to share with you some wonderful news…
Drum roll please…

Hello. Sorry I’ve been M.I.A. lately. If you follow me on Twitter or Facebook, you already know that I was in West Virginia over the holiday weekend, and then I was hit by the plague as soon as we arrived home early Tuesday morning (early as in 1:00am) – not even joking…
Oh, and if you don’t follow me on Twitter and Facebook, what the heck are ya waiting for?! 😉 Get. On. It.
Anywaaaays, today is Day 3 of what I’ve deemed Mandy’s Solitary Confinement and the good news is, I am finally starting to feel like a human being again. The bad news is, it took 1.5 boxes of Kleenex, 1 bag of Ricola cough drops, 1 carton of Florida’s finest orange juice, 2 liters of Gatorade, a few Green Smoothies, lots of T.L.C. from Bryan (along with avoidance), and close to 40 hours of sleep to get there. Hey, I don’t fall often, but when I fall, I fall hard.
