Hi y’all! I hope you had a nice weekend and your Tuesday is off to a good start.
What has everyone been up to? I’ve been doing a lot of pet sitting – this time of year tends to get busy for that! I also wrapped up my last week doing sea turtle surveys for the season. It was a bittersweet ending for me because the last month of surveys consisted of zero new nests and zero hatchlings – they were all washed out by Irma. Fortunately, the beaches are finally starting to look normal again, and we had a very successful season, regardless of how it ended.

Hi y’all! I’m back! Did you miss me?
I missed you…
It’s good to be back.
Bryan and I had a wonderful wedding weekend and every day since the wedding I’m finding myself more and more grateful for how lucky I am – I found a wonderful man to spend my life with, my family and best friends were there to witness me marry him, and we had such a good time. It doesn’t get much better than that!

Every year during this time, Floridians have to worry about hurricanes. And right now, we are prepping for one of the worst hurricanes ever recorded.
Stocking up on non-perishable food, water, batteries, putting up shutters and filling up gas tanks are just a few of the things we do in preparation. Bryan and I have done all of the preparing we possibly can, and now we just have to wait…
As well as eat all the perishable food we have in our fridge. Hey, y’all know how much I hate wasting food. 🙂

Hi y’all! I’m back again. And I have a super simple recipe for you to try this holiday weekend. It’s Labor Day and last time I checked, it’s a holiday to celebrate hard working people, so who really wants to work hard on Labor Day?
You. Are. Welcome.
Today’s recipe for vegan Peanut Butter Curry Chickpeas over fluffy white rice is super simple, with just six main ingredients. I served them over top white rice for a simple and satisfying (not to mention, protein packed!) lunch or dinner. I know it sounds crazy to combine peanut butter with chickpeas, but I promise you, you will not be disappointed! Even Bryan loved them – I always count recipes as a win when Bryan goes back for seconds.

Can a breakfast smoothie keep you full until lunch? Yes, a smoothie can be filling as well as wholesome, and this Raspberry Almond Butter Smoothie proves it.
Toast with any kind of nut butter and jam is one of my favorite go-to breakfast options, but sometimes I want something new. What better way to change things up than by throwing the tart and creamy combination into a blender? Throw in some healthy add-ins and you have yourself a powerful and healthy breakfast.

Yesterday I made Homemade Pumpkin and Oatmeal Dog Treats for the pups…
Don’t they look excited? They loved them!
The recipe I used made a huge batch of treats and I didn’t want to make that many because I have little pups, so I only made half, leaving me with a lot of leftover pumpkin.

I grew up eating Sloppy Joes. Actually, my middle name happens to be Jo, so I used to joke and call them Sloppy Mandy Jos.
Well, I thought it was funny, but you’re entitled to your own opinion. 🙂
When I became a vegetarian, my ground beef Sloppy Joe eating days became nonexistent (obviously), but that didn’t stop me from searching for the perfect meatless version. And guess what? I found it.
