Fried Zucchini Cakes


I recently started doing most of our grocery shopping at Aldi, and while I love how inexpensive it is, sometimes I’m not always happy with “how they do things.”  For starters, the store is set up a little strangely – the aisles are narrow and a lot of the items don’t really go together.  For example, the salad dressings are right next to the bread, and across from the produce.  I just find it odd.

Homemade Pizza Dough.


It’s been a tough week on the home-front…I haven’t been feeling my best – mostly just anxious, overwhelmed and achy.  My legs and feet are so swollen that I can barely fit into my shoes (thankfully we live in Florida, where shoes are not always a requirement).

On top of that, Buddy had surgery Tuesday and I was a mess! Nothing big, he just had his teeth cleaned and a few moles/masses removed, but the last time he was under anesthesia it didn’t go very well, so I was one worried momma.  I contemplated all day whether or not I had made the right decision by putting him under again, but his mouth has been very painful for awhile now, and the guilt I felt as I watched him suffer everyday outweighed my fears of another anesthesia.  Needless to say, I was a nervous wreck all morning…

Sweet Potato Chickpea BBQ Burgers. Veggie.


Do y’all ever have a craving for a big, juicy burger? 


Only my burger cravings are of the meatless kind. 🙂 This might be boring for some, but nothing beats a good Veggie Burger IMO.  In fact, some of the best burgers I can remember eating have been meatless.

Blueberry Smoothie.

Black Bean, Corn and Spinach Salad.

Happy New Year’s y’all! Wow. It’s so hard to believe it’s 2018! I don’t know about you, but 2017 was a pretty eventful year for me – our Costa Rica trip, engagement, wedding, pregnancy.  That’s a lot to fit into a single year, but I wouldn’t have it any other way.  It’s been an incredible trip around the sun, and I’m expecting the next one to be even better.

Does anyone have any resolutions this year?  I’ve never been BIG on resolutions, but there are a few things I’d like to attempt to do this year…

Fall has arrived.  Yes, even in south Florida.

Tomato Salad – Stuffed Avocados

Hi y’all!  I hope you had a nice weekend and your Tuesday is off to a good start.

What has everyone been up to?  I’ve been doing a lot of pet sitting – this time of year tends to get busy for that!  I also wrapped up my last week doing sea turtle surveys for the season.  It was a bittersweet ending for me because the last month of surveys consisted of zero new nests and zero hatchlings – they were all washed out by Irma.  Fortunately, the beaches are finally starting to look normal again, and we had a very successful season, regardless of how it ended.
