Lemon Tahini Dressing.

fullsizeoutput_1e51

One of my favorite ways to ensure that I’m getting enough greens is by eating a BIG salad at least once a day (usually for dinner).  Recently I went through a I don’t want to eat salad phase (I blame pregnancy), so I was making a lot of green smoothies instead, but my anti-salad days are over and today, I’m excited to share my current favorite salad recipe with y’all.

A Final Goodbye to Lily & How to Make the BEST Hummus.

I can’t believe it’s been over a week since I had to say goodbye to my Lily girl, and if I’m being honest (which I always am!), it’s been one of the most challenging weeks of my life.  Yes, it is getting easier, but I don’t think the heartache will ever fully go away.  I still cry every day, sometimes multiples times a day – usually in the morning, at 4:30 in the afternoon, and at night when I’m laying in bed.  The morning and 4:30 because these were the times Lily used to remind me it was time to eat, and the evening I guess because my mind and body slow down, forcing me to focus on my thoughts.

Fresh Mango Muffins.

It’s that time of year again. Time for MANGO MADNESS!!!

fullsizeoutput_1d3e

Our tree is producing mangos faster than we can consume them, so yesterday I decided to whip up some delicious Mango Muffins.  They are very similar to last year’s recipe, but I like these ones better.

I love making muffins.  It brings me back to my glory days working at a coffee shop. A little fact about me: I worked at a coffee shop throughout college and for some time after.  Still one of my favorite jobs because I met some of the most amazing people who I’m still friends with today AND I drank delicious (and free!) coffee all day long AND ate yummy pastries.

Like muffins.

Balsamic Bruschetta.

fullsizeoutput_1b97

There is something magical about hitting 6-7 weeks postpartum.  Many of my momma friends told me that I’d start to “hit my groove” at this point, and so far, this has been the case.  Bryan and I are feeling so much more confident about parenthood – not that there haven’t been moments of difficulty (SO many moments), but I feel like we finally have our feet planted beneath us.  A huge shift from the first few weeks when we brought Lucy home.  It feels really good.

Spaghetti Squash with Chickpeas.

fullsizeoutput_1b9ffullsizeoutput_1b9a

Hi y’all!  It’s me again. 🙂 Hopefully you haven’t forgotten about me as I’ve been on my “break.”

HA!

Perhaps I should come up with a better name, because anyone who has children knows very well that having a newborn is definitely not a “break.”

I’ll deem it a newborn hiatus instead.

Soft & Chewy Homemade Granola Bars.

Baby Clark is set to arrive any day now and Bryan and I are trying to stay patient, but it’s proving to be a challenge.   We’ve been pretty prepared for her arrival for quite some time now – the hospital bag is packed, the house is cleaned, the nursery is done, and we have some meals in the freezer for when we get home from the hospital.  But one thing I hadn’t done was make some grab n’ go snacks for us to have around the house – something I was told is very important, especially when you’re breast feeding.

Apparently breastfeeding moms get very hungry during all hours of the day…

I recently made a Costco run and grabbed some fruit bars and Clif Bars to have around the house for us, but guess what?  As we’ve been impatiently waiting, we’ve consumed most of them! So yesterday I took some time to restock our stash and I made Soft & Chewy Homemade Granola Bars.
