I CAN’T WAIT! I actually miss sweaters and boots, and hot chocolate and warm bowls of soup. Which brings me to today’s post…
I love soup. I also love lasagna. So this week, I decided to make lasagna soup!
Two birds. One stone.
I already have a bunch of favorite soups including split pea, broccoli cheddar and miso. But this Vegetarian Lasagna soup might be my new favorite (I feel like I say this a lot…).
I’ve been feeling a little blah lately, and this soup definitely serves up some much needed comfort-food vibes. Oh, and did I mention you avoid all the hassle of making traditional baked lasagna.

Pennsylvania was a brisk 27 degrees the first few days we were there so Bryan’s mom prepared bean soup for us – we joked that we rarely eat soup because it’s always so damn hot in south Florida, but when we came home, I craved a warm bowl of protein-packed soup.

It’s been another busy weekend for me – Bryan and I went to the Pittsburgh Penguins hockey game Friday night down in Ft. Lauderdale, and I’ve also been dog sitting again. Meaning, I haven’t slept much and I miss my pups! I love dog sitting but the overnight stays can be a bit brutal for me – I don’t always sleep well at other people’s houses, and the dogs I’m watching are usually missing their mom and dad so they don’t always sleep well either. Making for a very grumpy (and sleep deprived) Mandy.

Hi y’all! I hope you had a nice weekend and your Tuesday is off to a good start.
What has everyone been up to? I’ve been doing a lot of pet sitting – this time of year tends to get busy for that! I also wrapped up my last week doing sea turtle surveys for the season. It was a bittersweet ending for me because the last month of surveys consisted of zero new nests and zero hatchlings – they were all washed out by Irma. Fortunately, the beaches are finally starting to look normal again, and we had a very successful season, regardless of how it ended.

Greetings from my new KING size Yogabed. That’s right, Bryan finally budged (after months of me whining) and got us a king size bed. It was our wedding gift for each other. And I must say, after just one night of sleeping on it, I’m in heaven!
Speaking of heaven, I have another Homemade Granola recipe for y’all to try. Yes, it’s very similar to my original recipe, but I did some tweaking and I like this one even better! This homemade granola could run circles around any store-bought brand. It’s also healthier. Duh. Oh, and let’s not forget versatile. You can play around with the mix-ins and spices to get just the flavor you want! It’s hard to beat homemade granola. Don’t you agree?
