What has everyone been up to? I’ve been doing a lot of pet sitting – this time of year tends to get busy for that! I also wrapped up my last week doing sea turtle surveys for the season. It was a bittersweet ending for me because the last month of surveys consisted of zero new nests and zero hatchlings – they were all washed out by Irma. Fortunately, the beaches are finally starting to look normal again, and we had a very successful season, regardless of how it ended.

Greetings from my new KING size Yogabed. That’s right, Bryan finally budged (after months of me whining) and got us a king size bed. It was our wedding gift for each other. And I must say, after just one night of sleeping on it, I’m in heaven!
Speaking of heaven, I have another Homemade Granola recipe for y’all to try. Yes, it’s very similar to my original recipe, but I did some tweaking and I like this one even better! This homemade granola could run circles around any store-bought brand. It’s also healthier. Duh. Oh, and let’s not forget versatile. You can play around with the mix-ins and spices to get just the flavor you want! It’s hard to beat homemade granola. Don’t you agree?

Bryan and I had a wonderful wedding weekend and every day since the wedding I’m finding myself more and more grateful for how lucky I am – I found a wonderful man to spend my life with, my family and best friends were there to witness me marry him, and we had such a good time. Every year during this time, Floridians have to worry about hurricanes. And right now, we are prepping for one of the worst hurricanes ever recorded.
Stocking up on non-perishable food, water, batteries, putting up shutters and filling up gas tanks are just a few of the things we do in preparation. Bryan and I have done all of the preparing we possibly can, and now we just have to wait…
As well as eat all the perishable food we have in our fridge. Hey, y’all know how much I hate wasting food. 🙂

Today’s recipe for vegan Peanut Butter Curry Chickpeas over fluffy white rice is super simple, with just six main ingredients. I served them over top white rice for a simple and satisfying (not to mention, protein packed!) lunch or dinner. I know it sounds crazy to combine peanut butter with chickpeas, but I promise you, you will not be disappointed! Even Bryan loved them – I always count recipes as a win when Bryan goes back for seconds.
