I’ve still got that Mango Tropical Feeling…
Plus, I still have about 7 mangoes to eat before they shrivel up into rotten oblivion.
The good news is, Bryan is home (yippee!) to help me on Mandy’s Mango Consumption Mission. And more good news is that I made a kick-ass smoothie that I know will have me well on my way to conquering this ongoing mango journey.
I fall in love with fruit smoothies more and more every day.
Easy, fun to make, delicious, refreshing, natural, healthy, creamy and colorful are just a few of the words that come to mind when I think of fresh fruit smoothies. Smoothies are full of fruit or vegetables (or both!) that supply us with a glass of delicious goodness bursting with energy. It’s also one of the easiest ways to get those all-important five daily servings of fruit and vegetables.
I’m excited to share with y’all today’s recipe for two reasons: it’s oh-so-delicious (duh) AND it was super fun to photograph – something I’m still trying to get better at. It’s a work in progress…
But when you have colorful subjects and almost the perfect amount of sunlight, even the most amateur photographer (a.k.a. ME!) can get a pretty decent shot. 🙂
And what is this colorful subject you ask?
It’s my new obsession – I feel like I say this about every new smoothie I make, so get used to it. 🙂
Magical Creamy Mango Smoothie
Yield: serves 1
INGREDIENTS:
- 3/4 cup cold non dairy milk, I used almond milk
- 1/4 cup vanilla yogurt
- 3/4 tsp pur vanilla extract
- ~1 1/2 cups fresh mango (I used 2 small mangoes)
- 4-5 ice cubes
INSTRUCTIONS: Add all ingredients to a high speed blender. Blend until smooth, adding more ice or milk to get desired consistency.
I served my smoothie alongside a toasted bagel with peanut butter. And as you can see in this picture, I was guzzling it down while I was still trying to snap more shots!
Calling this smoothie good doesn’t do it justice. This smoothie is BOMB DIGGITY! Are people still saying bomb diggity? Or did that fade away years ago? Well, here is my attempt to bring it back! 🙂
